Nourishing Detox Vegetable Broth

This healthy and nutritious vegetable broth is loaded with essential minerals and vitamins. A perfect treat when you feel under the weather or when you need some comfort food on a cold and rainy or snowy day,

INGREDIENTS
3-4 celery stalks
1-2 leeks
1 yellow onion
2 scallions
3 cloves garlic
2 carrots
1 small bok choy
1 yellow potato or sweet potato or yam
10 sprigs Cilantro or parsley
1 fennel (whole)
3 bay leafs
5 mushrooms (shitake, oyster, white or brown mushrooms)
1 small daikon
1 small red beet
1 3-inch fresh ginger root
1 small fresh turmeric root
2 tbsp. dried nettle, oat straw and lemon balm – available at the herbal store
1 piece kelp
1 piece dulse
1 tbsps. goji berries
himalayan or sea salt and onion powder to taste
pinch of black pepper
quinoa - optional
INSTRUCTIONS
Thoroughly clean all the vegetables and cut in small pieces. Add all the ingredients into a slow cooker. Fill the slow cooker to the top with water. Set at low temperature for 5-6 hours.
Strain the liquid through a mesh strainer. Store in an airtight container and keep in fridge for up to 5 days or, freeze.
Heat soup and add some miso before serving. Garnish with parsley or cilantro.
NOTES
You can replace the vegetables with any vegetable of your choice.
