Nourishing Detox Vegetable Broth

This healthy and nutritious vegetable broth is loaded with essential minerals and vitamins. A perfect treat when you feel under the weather or when you need some comfort food on a cold and rainy or snowy day,

INGREDIENTS

  • 3-4 celery stalks

  • 1-2 leeks

  • 1 yellow onion

  • 2 scallions

  • 3 cloves garlic

  • 2 carrots

  • 1 small bok choy

  • 1 yellow potato or sweet potato or yam

  • 10 sprigs Cilantro or parsley

  • 1 fennel (whole)

  • 3 bay leafs

  • 5 mushrooms (shitake, oyster, white or brown mushrooms)

  • 1 small daikon

  • 1 small red beet

  • 1 3-inch fresh ginger root

  • 1 small fresh turmeric root

  • 2 tbsp. dried nettle, oat straw and lemon balm – available at the herbal store

  • 1 piece kelp

  • 1 piece dulse

  • 1 tbsps. goji berries

  • himalayan or sea salt and onion powder to taste

  • pinch of black pepper

  • quinoa - optional

INSTRUCTIONS

Thoroughly clean all the vegetables and cut in small pieces. Add all the ingredients into a slow cooker. Fill the slow cooker to the top with water. Set at low temperature for 5-6 hours.

Strain the liquid through a mesh strainer. Store in an airtight container and keep in fridge for up to 5 days or, freeze.

Heat soup and add some miso before serving. Garnish with parsley or cilantro.

NOTES

You can replace the vegetables with any vegetable of your choice.
